This is in response to a request I saw earlier this week re: Barbecue
Sauce. This is a recipe a copied from a some magazine (in the days before I
kept track of sources) that is really very good.
2 medium onions finely chopped
1 clove garlic, finely chopped
1/4 cup vegetable oil
2 Tbsp chili powder
2 cups catsup
1 cup vinegar
1/2 cup lemon juice
1/4 cup Worstershire sauce
1/3 c finely packed brown sugar
2 Tbsp prepared mustard
1 Tbsp crushed celery seed
2 tsp crushed cumin seed
2 Tbsp butter or margarine
Saute onions and garlic in vegetable oil 'til golden and tender (about 10
minutes). Stir in the chili powder, cook one minute. Stir in remaining
ingredients (except butter). Bring to boil. Lower heat, simmer uncovered
for 30 minutes, stirring often. Stir in butter. Makes about 4 1/2 cups.
Keeps covered in fridge for months.
